Nutrition Nugget & Recipe: Green Onions

Green onions are one of the most versatile and inexpensive ways to add a fresh and aromatic flavor to salads, egg dishes, stir fries, casseroles, soups, sauces and even sandwich spreads. Cabbage and Green Onion Slaw
Yield: 4 side salads
Ingredients
- 2 cups shredded red cabbage
- 1 cup thinly sliced green onions
- 1 jalapeño, seeded and finely chopped
- 3 tbsp lime juice
- 2 tbsp olive oil
- 2 tbsp honey
- Salt & pepper to taste
Directions
- In a large bowl, combine cabbage, green onions and jalapeño.
- In a small bowl, whisk together lime juice, olive oil, honey and salt and pepper. Add to cabbage mixture and toss gently to coat evenly. Cover and chill at least 30 minutes before serving.
