Spinach Salad with Mango, Avocado and Jicama
Yield: 6 side salads
Ingredients:
- 8 cups baby spinach leaves, washed
- 1 ripe mango, peeled and cut into 1/2″ cubes
- 1 small jicama, peeled and cut into thin strips
- 1 ripe avocado, peeled and sliced
- 1/2 medium red onion, sliced thinly
- 1/3 cup of dressing of your choice
Directions:
- Toss all salad ingredients gently in a large bowl.
- Optional: Divide into large portions and serve with grilled chicken or seasoned black beans for an entree salad.
