Nutrition Nugget & Recipe: Cucumbers

Whether you grow your own in your garden, pick out a fresh local variety at the farmer’s market, or shop at a supermarket, cucumbers are a cool summer treat that are packed with nutrition.  This Cucumber and Peach Salad recipe plays on cucumber’s versatility to marry sweet and savory flavors and would be great as an accompaniment to your summer BBQ or as a light summer side dish.

Cucumber and Peach Salad
Yield: 4 servings

Ingredients:

  • 2 peaches, pitted and thinly sliced
  • 2 small cucumbers, thinly sliced
  • 1/2 medium red onion, thinly sliced
  • 2 Tbsp. apple cider vinegar
  • 2 Tbsp. olive oil
  • Salt and pepper to taste

Directions:

1. Mix together all of the ingredients in a bowl. Let flavors mingle by storing in the refrigerator at least one hour before serving.
