Nutrition Nugget & Recipe: Cucumbers

This Cucumber and Peach Salad recipe plays on cucumber’s versatility to marry sweet and savory flavors and would be great as an accompaniment to your summer BBQ or as a light summer side dish.
Cucumber and Peach Salad
Yield: 4 servings
Ingredients:
- 2 peaches, pitted and thinly sliced
- 2 small cucumbers, thinly sliced
- 1/2 medium red onion, thinly sliced
- 2 Tbsp. apple cider vinegar
- 2 Tbsp. olive oil
- Salt and pepper to taste
Directions:
1. Mix together all of the ingredients in a bowl. Let flavors mingle by storing in the refrigerator at least one hour before serving.
