Try this colorful Confetti Slaw recipe as a refreshing side dish or as a small meal by adding whole-wheat crackers and low-fat cheese for fiber and calcium.

Confetti Slaw with Poppyseed Dressing

Yield: 4 servings

Ingredients

  • 2 tbsp. apple cider vinegar
  • 1 1/2 tsp. honey
  • 1 1/2 tsp. Dijon mustard
  • 1 1/2 tsp. fresh dill, chopped
  • 1 tsp. poppy seeds
  • 1 tsp. olive oil
  • Salt and pepper to taste
  • 1 cup thinly sliced green cabbage
  • 1 cup thinly sliced red cabbage
  • 1/2 cup shredded or pre-cut matchstick carrots

Directions

  1. Combine first six ingredients in a small bowl and whisk to combine.
  2. Add salt and pepper to taste to this dressing.
  3. Pour over cabbage and carrots in a medium bowl, toss to coat evenly and serve.
