Confetti Slaw with Poppyseed Dressing
Yield: 4 servings
Ingredients
- 2 tbsp. apple cider vinegar
- 1 1/2 tsp. honey
- 1 1/2 tsp. Dijon mustard
- 1 1/2 tsp. fresh dill, chopped
- 1 tsp. poppy seeds
- 1 tsp. olive oil
- Salt and pepper to taste
- 1 cup thinly sliced green cabbage
- 1 cup thinly sliced red cabbage
- 1/2 cup shredded or pre-cut matchstick carrots
Directions
- Combine first six ingredients in a small bowl and whisk to combine.
- Add salt and pepper to taste to this dressing.
- Pour over cabbage and carrots in a medium bowl, toss to coat evenly and serve.
