Nutrition Nugget & Recipe: Peppermint

It’s time to say goodbye to pumpkin spice and say hello to peppermint! Peppermint is not only a great candy cane flavor, but it also has many health benefits. Have a stomachache from eating too many holiday cookies? Sip on some peppermint tea or grab a peppermint candy for relief.

Fudge Peppermint Chocolate Holiday Cookies

Yield: 24 cookies

Ingredients

  • 1 1/2 cup whole wheat flour
  • 5 tbsp unsweetened cocoa
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup sugar
  • 3 1/2 tbsp butter, room temperature
  • 3 1/2 tbsp mashed avocado
  • 1 large egg
  • 3 tsp crushed peppermint candy cane

Directions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Combine flour, cocoa, baking powder, baking soda and salt in a bowl, stirring with a whisk and set aside.
  3. Place sugar, avocado and butter in a bowl. Beat with a mixer at medium speed until combined, about three minutes.
  4. Add egg to the batter and beat until mixed. Add flour mixture, beat at low speed just until combined.
  5. Shape dough into 24 balls and place two inches apart onto baking sheets lined with parchment paper. Flatten the cookies with the bottom of a glass.
  6. Top the center of each cookie with 1/4 teaspoon of crushed peppermint.
  7. Bake at 350 degrees Fahrenheit for seven minutes. Let cookies cool completely.
